Recently Cameron Diaz was on to talk about her new book, The Body Book. During the conversation she talked about her favorite snack which she called shallot gold. Basically you take a bunch of shallots and then caramelize them down to a paste which can be used on anything. She claimed it almost tasted like bacon, so we obviously had to give it a shot.
Here are the shallots. Start by mincing them down. Even though these are small, they burn the eyes.
Add them to a pan on medium heat with olive oil. Saute until they become translucent in color and then turn the burner down to low. After 45 mins on low heat, here is the result. Did it taste like bacon, not really, but if it was cooked down more it could have had a shot.
